Green – has an exceptionally dark green color, looks like finely chopped freshly mown grass, dries naturally without any additional processing. During natural drying, the color of the leaves is preserved, but there is a possibility that the most valuable substance, mateine, will quickly transform into caffeine.
The main place of cultivation of the plant is Brazil and Paraguay. It is found quite often on the world market under the name “Paraguayan tea”. In appearance it is very similar to fine green tea. The vitamin content is much lower than in varieties growing in Argentine lands, due to the difference in soil fertility and subtropical climate. High climate humidity and growing at a certain altitude above sea level does not affect Yerba Mate in the best way.
Fried - the same green, but fried using a certain technology in ovens. It has a brown color and resembles roasted coffee. Contains more caffeine than all varieties.
Golden – has a golden-light pistachio color. Finely ground raw materials and the absence of a large number of twigs and sticks indicate its high processing technology. The presence of thin cuttings is acceptable. Mandatory presence of dust and airiness of raw materials. Fresh Yerba Mate branches tied into small brooms are stacked and smoked on fires or in clay ovens that are simmered with special wood. Golden Mate is called the “green gold of Argentina”; it is the main branch of the country’s modern industry.
