We continue to publish a series of articles of the flavorist, the head of the development of Sergei Belkov’s food additives, about popular food myths and food.
Validity
One of the attributes that determines the value of any tool, any methodology is validity. The term means that the tool should measure what it must measure. We can determine the temperature of the body by the thermometer, but we cannot measure the refractive indicator for them. If the parameter we need is determined indirectly, then we are obliged to prove the relationship between the value of the parameter and the results of our measurements.
In the case of measuring the temperature, in fact, we record the volume occupied by mercury, and the scientifically proven relationship between the volume and temperature is graphically reflected on the thermometer scale. If such a dependence did not exist, then the thermometer would not be a valid tool, and our dimension would not make sense.
Checking for validity is a very useful procedure not only for research. She can give us a lot in everyday life, helping to understand the huge stream of conflicting information received daily from the media and advertising.
Food hypersensitivity
This term includes all the atypical reactions of the body to food. Simplifying, they can be divided into two large groups:
- Food allergies that are of several types. Allergy is always the answer of the body's immune system to some substances found in food, usually proteins. The reaction is manifested regardless of the amount of food, the fact of the presence of an allergen is important.
- Food intolerance, which can also be realized by several mechanisms united by a common feature - the immune system is not involved in such manifestations. Often the “wrong” reaction of the body is associated with a lack of one of the enzymes necessary for full digestion. An example of lactose intolerance associated with the deficiency of the enzyme - lactase. People with food intolerance, part can use a small amount of “intolerable” substances, unlike allergy sufferers without harm.
Modern medicine has scientific methods for the diagnosis and treatment of both types of hypersensitivity.
Hemocode
If you believe the advertising in the press and on television, then the “hemocode” is the advanced method of diagnosing “food intolerance” based on the observation of the patient's hemilyumines, to which the “extract” of the product was added. The patient’s blood reaction to extracts 130 foods is examined, the blood reaction is observed by the glow of cells, into a microscope. Based on the results of the analysis, the patient is issued a list of products that he can eat and which should not be, after which all sores can magically disappear, cure and obesity occur.
Most critics of the method indicate the viciousness of the very methodology for studying the blood reaction to food. I will not do this. The method of calculating luminous cells is a secondary matter. The main problem of the approach is that it is initially not valid, and therefore, from a practical point of view, meaningless. Products never interact with blood. To study the interaction of blood directly with food is the same as measuring the refractive index thermometer.
The authors of such methods should better teach biology at school and medicine at the institute. After all, it is assumed that they are doctors. Is it by chance, whether it is specifically, but it turns out that they are misleading gullible citizens.
Nothing is digested in the blood. Even a slight change in the composition of the blood is a serious emergency for the body, in order to avoid this situation, nature supplied us with a digestive system that reliably protects against foreign substances, and a set of enzymes to turn the components of food into the necessary compounds. If we suddenly have a lack of the right enzyme, intolerance to this substance arises, and it is excreted from the body in a completely natural way. Sometimes, however, causing not very pleasant effects, which happens, for example, in the case of lactose intolerance.
If you swallow the snake poison, nothing will happen. He just digested. Problems begin in the event of a snake bite and poison enters the bloodstream. Of course, there are substances that can enter the bloodstream.

Such compounds are often used in medicine. Analgin, aspirin and a huge number of drugs. There is, however, a big difference between food and a pill. The composition of the tablets is specially selected in order to facilitate the absorption of the medicine, and before stamping tablets, long and expensive studies are carried out for each component. Even if we assume that any food compounds have the ability to directly enter the bloodstream, the effect of specific substances should be observed, but not “extracts” of 130 products should be observed.
What is the difference between traditional, albeit not always modern methods of medicine and fashionable, but not traditional methods of nutritional clinics? In the first case, we measure with valid reliable tools, in the second case we get a result that has nothing to do with solving the task.
The cost of one analysis "Hemocoda" in Moscow is 10,000 rubles.
Anatoly Volkov
In the Russian version of the Forbes magazine, a list of the most influential Moscow nutritionists for 2010 was published [1], the first place is Anatoly Volkov.
Interestingly, should the best nutritionist of Moscow pay attention to this problem or not? I turned and gave his comments.
“They give the patient only analysis. And I'm sure that it is impossible to approach the interpretation of the analysis mechanically. Medical interpretation is half the success. It is necessary not only to see a piece of paper, but also a person, there can be a bunch of nuances, ” he says in an interview.
Maybe he is not aware of the technique? It turns out that he is very in the know. Volkov works with patients in his own author's method, the purpose of which is also the search for individual food intolerance. By blood.
“ Each of us has products with which our digestion cannot cope. According to biochemists, food can fall into the blood in an unfinished form. ”
“We add to the patient pre -taken in a certain way prepared extracts of products, and then we measure the reaction. The reaction of the blood, the most important liquid organ of the human body, which is subject to rapid changes and a very complex colloidal system, “gives out” the body's opinion about a particular food product ” - we read on the website of its clinic.
Coincidence? Deja vu? Is it really the most famous and expensive Moscow nutritionist applies such methods? This is true. Even the number of extracts used is the same as in the "hemocode" - the same 130.
However, there is a difference. One analysis of Dr. Volkov will cost more - up to 15,000 rubles. [2].
Marianna Trifonova
Marianna Trifonova closes the six “Forbes” of fashionable Moscow nutritionists. It is known for strong criticism of diets based on separate nutrition, considers them populist and unscientific. It seems that she definitely must tell us the truth. By a strange coincidence (coincidence?) In the work, he uses the author’s method of blood test, though not to food intolerance, but to allergic reactions. Can a replacement for the word “intolerance” with “allergies” affect the validity of the method? Alas.
The author’s approach is based on the assumption already mentioned above: illegal food enters the bloodstream. From the “hemotes” (this is what is called), any examination begins, but the number of “products extracts” is already less, only 96.
The methodology of Ms. Trifonova is no worse and no better than the “hemocode” or the Volkov method. From my point of view, it is just as meaningless and has nothing to do with solving health problems and weight loss.
It should be paid tribute to the integrated approach of Marianne Trifonova. She believes that all failures in the weight loss of patients are due to the fact that people blindly relied on the results of the analysis, but not a change in food habits. Do the results of such an analysis affect something? The answer is negative.
The cost of the “hemotes” according to the Trifonova method is 7,000 rubles. [3].
Alexey Kovalkov
Dr. Alexei Kovalkov, who was in the third position in the ranking, the only one of the famous nutritionists dared to condemn the “hemocode”. In a recent critical note "Hemocode - quackery or scientific discovery?" [4] He sheds us light on the characteristics of the method. In a little, however, a strange manner.
At first, Kovalkov gives its classification of food intolerance:
- innate - it is present throughout life, the reasons for its appearance have not yet been clarified;
- allergies to food, in which antibodies with hypersensitivity to certain protein components of the product are produced in the body;
- Congenital deficiency of enzymes, which causes inferior digestion of food.
Isn't it true, this does not correspond to the classification that traditional medicine offers us? Why suddenly an allergy became part of intolerance, and who are “antibodies with increased hypersensitivity”? What was meant by the type of “congenital intolerance”, which has not clarified the reasons? Suppose he just forgot what he was taught, or confused. But it was possible at least with Wikipedia to blame so as not to be confused and so enough confused readers.
Having wounded hemocodes in a vicious theoretical basis of their method, it proceeds to the analysis of practical. Crites a method of preparing products extracts, then a method of measuring the glow of blood. At the end of the defeat of Kovalkov, he notes that the hemocode methodology is not published in any scientific journal.
For whom was this note written? What goals were pursued when writing this “analysis”, is it only concern for us so that we do not fall on a fashionable fishing rod?
It is a pity that the nutritionist known throughout the country, the leading and frequent guest of the programs about a healthy diet on radio and television, did not notice the obvious - it is impossible to draw conclusions on the reaction of blood and food. It is a pity that one of the most influential nutritionists is so far from the subject in which he should understand.
The cost of one consultation in the Kovalkov clinic is 5,000 rubles.
Conclusion
If you have a disease, food allergies or intolerance, you need to do tests and treated in a hospital, but not in a fashionable clinic for weight loss. They lose weight not from products, but from a lack of calories. “We need to eat less,” the Mayan Plisetskaya Maya Plisetskaya once formulated the content of the best scientific diet. And was right.
So it is more reliable. So cheaper.
