It happened. Scientists inflicted the next, and, possibly, a decisive blow to flavorings. “The flavor leads to dementia”, “popcorn causes Alzheimer's disease” - many publications have passed under such headings. The essence of the sensation was that the diacetile (indeed, a frequent component in the composition of flavorings, including popcorn) inevitably leads to Alzheimer's disease. The harm of flavorings is finally proven, and manufacturers are pressed against the wall with murderous arguments.
Among the television reports, I was personally impressed by me was especially impressed by the fifth channel. We were told that with each portion of popcorn a person is approaching dementia and even one diacetile molecule can cause irreparable damage in it. Experts, including a real member of the Russian Academy of Sciences (I hope no one builds illusions about this organization), agreed: "Fragrance is evil!"
Given that this is not the first claim to the diacetile, the opening looks even more intimidating. Previously, the diacetile already appeared as the cause of a really terrible disease, obliterating bronchiolite, the salvation from which is only the transplantation of the lungs. It turned out that the risk of undergoing dangerous concentrations of a substance at the end consumer zero, it was more about workers who inhaled a diaic in diacetile for a long time. But the sediment remained.

So what is "diacetile"? Where did this attack come from? You won’t believe it, but if you have a desire to exclude it from the diet, you will have to exclude bread and oil, cheese and yogurt, coffee and cocoa from the diet, as well as all fruits and alcohol, including beer, because diacetil is not an artificial component at all that “imitates” the taste of butter. Quite the contrary. A huge number of familiar natural products imitates the taste of diacetile, because it is it that is a key substance that determines the taste of these natural products. The quality of butter, for example, directly depends on the content of the diacetile in it: the more tastier.
Fans of flowers should be careful: lavender, geranium, daffodils, tulips and other flowers contain this molecule in their smell, which, according to the fifth channel, makes people dumber.
A probiotic bacterium Lactobacillus, known thanks to advertising CASEI It produces diacutil in the process of its life. She does this not only in yogurt, but also in our intestines. Is it really every time, using yogurt, we get an internal enemy approaching us to sunset?
There is no salvation. Even if we do not eat anything at all and get rid of all our microflora, it will not help. Diacetile, as it turns out, knows how to produce our own organism - this substance is one of the metabolites of ethanol.
What to do? Stupid, how do journalists and experts from TV predict? Not at all. Let them stupid there themselves, and we will do the simplest thing that they have not guessed to - we will look at the original research.
Today, even solid scientific publications allow themselves catchy headlines in the hope of maximum coverage of the results of published research. “The aromatizer of the oil, diacetile, enhances the toxicity of beta amyloid”-the article is published under this name. Everything seems to be correct. Indeed, diacetile. Indeed, a flavor. Indeed, it enhances toxicity.
But behind a bright heading lies much more everyday content.
It was found that diacetile helps to deposit beta-amyloid with a concentration of about 2 PPM. Typical flavored products may contain 0.05-5 PPM diacetiles with an upper limit of 50 PPM. For comparison: the content of diacetile in natural, without flavorings, yogurt is 1-2 ppm.
Let no one be confused that all the figures given are one order, which means that the threat looks believable. There is no talk of any disease of Alzheimer, because experiments were carried out on cell cultures, not at all on living organisms. No product in real life falls into the brain immediately. Molecules absorbed with food need to go a very difficult path through the intestines, the circulatory system and the GEB. Very rare substances are capable of this. The concentration of the substance in popcorn or yogurt is not at all the same as the concentration in the brain. With the same success, could cell cultures be treated with pea soup or orange juice, and then talk about its dangers for the body.
The authors of the work, which is characteristic, understand this and indicate that to draw some conclusions on the basis of this work very prematurely, that experiments on animals are needed, and all the rest, typical comments in this case. They understand something to understand, but they still left the loud name of the article. And how else to draw attention to your, although high -quality, but no outstanding work, except for its loud title?
The answer to the question formulated in the headline, however, I want to give positive. You can deeper from popcorn. The flavor is not even needed here, it is enough to replace the organ in the head with a popcorn, which is customary to think. An example of this was successfully demonstrated by the authors of the plot on the fifth.
