
The best young chef of Russia and the CIS recognized the chief of the St. Petersburg restaurant Schengen Ruslan Evstigneev. In the semifinals of the S.Pellegrino Young Chef contest - 2017 he represented the Kazan restaurant Pushkin, in which he had previously worked. About this writes "dog.ru."
At the competition, he presented the jury with the “nomad's gaze for dinner”, the main ingredients of which were Konina, Koumiss and Barley.
-I was inspired by the story of my family on a competitive dish: my ancestors of Tatar-Mongols. They bred horses, so often on the table you could meet Konin. I chose barley porridge for the role of the side dish, I wanted to make something unusual out of a simple product. Koumiss was served according to our tradition: they drink it after fatty foods.
Evstigneev said that together with the previous chief of the Schengen restaurant on Kirochny Street, the institution’s menu is now processing the menu. According to him, he will make a greater emphasis in the author's cuisine. In the restaurant menu, Sevich from salmon in Peruvian sauce may appear, as well as a dish with which Evstigneev won the competition adapted to “local trends”.
- I am very surprised by St. Petersburg - here is a completely different level of gastronomy. In the spring, I came here to give dinner, and they made a remark to me about the frying of meat. In their opinion, it was too fried, but in Kazan, such meat would be considered almost raw.
The jury evaluated participants according to criteria such as the selection of ingredients, professional skills, author’s view, presentation of the dish and the originality of the idea. Evstigneev will also perform in the final of the competition in Milan.
