In Russia, caviar rose to the historical maximum

In October 2021, the average price of salmon caviar in retail for the first time exceeded the mark of 5 thousand rubles per 1 kilogram, RBC reports with reference to the data of Rosstat. To this level, red caviar prices have never risen in the entire history of observations since 2000. For 20 years, the caviar went up 7.4 times: in October 2000, 1 kg cost 675.2 rubles in retail.

Prices rose, despite the increased extraction of salmon, which give red caviar.

Salmon caviar has been constantly getting more expensive since the beginning of 2020. So, in November last year on the eve of the New Year holidays, the average prices exceeded 4 thousand rubles per 1 kg, breaking the August 2018 record (3.9 thousand rubles). Red fish also rose in retail: the price for 1 kg of salmon fish in chilled and ice cream in October 2021 increased by 16% compared to last year - from 726.9 to 845.3 rubles.

At the same time, according to the head of Rosrybolovy, Ilya Shestakov, against the backdrop of the growth of catch, it is worth waiting for a decrease in prices. "The volume of the supply will be significant. And it is clear that, one way or another, the price of red fish and caviar will decrease," the official said in September.
